Posted - Apr 13 2020 : 11:50:02 AM Hi there, My name is Heather and I am a newbie to this whole Wild Bread thing...I've done everything as prescribed, yet no bubbles after an hour of proofing and the dough is not rising...this is my second week in to the Counter Mother...I'm using organinc white whole wheat by King Arthur Flour. I have bubbles in the mother, yet no rise to my loaves...last week I threw out my batter - no rise after 12 hours. I fed the mother all week, and there were bubbles and a nice fermenting smell. If my loaves don't rise this week, are there any suggestions as to something to make with the batter? Best, Heather |

Posted - May 09 2020 : 11:41:33 AM Hi Heather...I just finished my first loaf of batter bread and had very little rise too. It has a great sourdough taste but it was only about 1-1/2 inches in high (I let it rise in the proofer for about 8 hours). It sounds like after a few more weeks we'll have what we're looking for...let me know how yours has turned out since you're a few weeks ahead of me!

Posted - Apr 14 2020 : 08:14:42 AM Hi, I'm sorry to hear you're having trouble with your mother not rising. Please note that it can take upwards of 4 weeks for your mother to develop enough wild yeasts to rise. If you are nervous about your bread not rising on Bake Day this week, you can always use your mother for recipes in the Quick & Easy Sourdough-Enhanced Treats Section (pages 172–189).
I think it's very encouraging that your mother has a pleasant fermenting smell. One thing I would suggest is ensuring that the flour you are using is free of additives (this can happen, even with high-quality organic flours), and is milled wheat only. |
