Week two of my Counter Mother, and week one gave me a great-tasting, but 2-inch tall loaf of bread (loved it anyway!)

So for week two, thinking it'll still need more time for the yeast to fully develop and give me tall loaves, I put all the batter into one loaf pan...it raised in a couple of hours and was fantastic!

Lesson learned...I'm sure I could have had two great loaves (if I'd have had patience) but it's good to know that looking to next week, I'll have even more to enjoy. Thanks for all the input and advice!
