I am a huge fan of the English muffins, specifically Thomas English Muffins with all those nocks and crannies. Has anyone found a good similar recipe that you would be willing to share?

My favourite way to eat an English muffin is with with butter and crunchy peanut butter! Yea, the big holes holds the butter well! So, I stay away from English muffins!

I would love to be able to make my own butter. I often look at my MJ Milk Cow Kitchen book and dream!

I'm presently on a steel cut oat kick in the morning. I discovered maple sugar at the co-op (maple syrup in crystallized form) OMG, so good.

I will have to look up a "Thomas" English muffin. Perhaps it's like the different versions of Swiss Cheese (which we make here at the farm using the milk from my Jersey girls). Swiss cheese holes can be made bigger using different curing techniques. Thanks for the challenge: bigger air holes in our English Muffins (page 50) for holding more melted butter. And honey. Or raspberry jam. Or ...
