I often dream of lazy, care-free summers, but this idealistic thought rarely aligns with reality. I’m always trying to come up with ways to streamline my time spent in the kitchen. Recently, I made a loaf of focaccia bread (p. 134 of Wild Bread). I cooked it in a slightly smaller pan so the bread was a little thicker, sliced the entire loaf in half and filled it with baked scrambled eggs with spinach, mushrooms, and feta cheese. Then I cut the whole loaf into sandwiches and voila! Easy, grab-and-go breakfasts for a week!

For my next round of easy breakfasts, I’m making a batch of sprouted wheat Bialys (p. 146). Then in the mornings, all I need to do is toast them, slather them with cream cheese and top them with a bit of smoked salmon. Add a cup of coffee, and my days will be off to a great start!
