Posted - Jan 10 2019 : 05:59:35 AM On page 28 of her book, Maryjane differentiates between Einkorn and Einka with Einka listed as whole-wheat flour (as well as the fact that Einka is a brand name). I'm not sure which recipes to follow though because I purchased whole-wheat Einkorn flour (Jovial). If I understand correctly, when referring to Einkorn, she's talking about Jovial's all-purpose flour. Can someone clarify? |

Posted - Mar 13 2023 : 07:00:40 AM Working with whole-wheat Einkorn flour is similar to working with other whole-wheat flours in that it takes the flour a little longer to absorb water. There are a few quirks associated with Einkorn flour, which are discussed on p. 193 of Wild Bread. Most of these have to with working with refined Einkorn. This flour has a tendency to form long, elastic strands of gluten and has a little more slump than typical dough, which can give the misleading impression that more flour needs to be worked in. Generally speaking, you won't run into this issue with whole-wheat Einkorn.
Since you've already made breads with whole-wheat Einkorn, you likely have a gauge on how it behaves and performs in recipes. If you have any questions, I'm always happy to help troubleshoot. |

Posted - Mar 11 2023 : 08:17:37 AM I made my mother about 15 years ago with high quality white flour, but I have successfully used it to make other types of breads. I don't usually make white bread unless it's to give as a gift. I am considering using whole wheat Einkorn to make a new mother. A couple of days ago I made an artisan loaf with all Einkorn except for the starter and it worked better than I expected. Any tips for me?

Posted - Mar 04 2023 : 4:11:09 PM Hello! I am wondering how you're doing with your Einkorn bread now that you are this far out from your post. I am considering doing the same thing. I love the flour but so far haven't made a mother with it nor have I baked a 100% Einkorn loaf. Thanks! Sandy
