Hi everyone! I'm so excited to be learning something new that is also delicious and good for us. I retired last month and started working through my Wild Bread book. I have really appreciated this forum as I worked my way through establishing my counter mother then refrigerator mother and now on to some loaves of bread. I often questioned my interpretation of something I read in the book with something I was looking at in my kitchen so this has been very helpful. Thank you!

I'll be exited to see your pictures when you make it to your computer. They all sound so wonderful!

Your comments on how thrilling it is to pull loaves out of the oven reminded me of a time my nephew was visiting. The potatoes, carrots, and celery were all on in my garden, so I made a big batch of clam chowder and a crusty boule to go with it. He was pretty excited to help in the kitchen, and when I pulled the bread out of the oven, it was audibly crackling. At the time he was 13 or so, and in the goofy early teen years. When he heard the bread crackling he just started laughing because he was so excited. A good memory.

Thanks Ashley! I am working on the Dutch Oven bread. I can’t believe how thrilling it is to open that lid and see a beautiful loaf of bread. I’ve taken more pictures……whole loaves, inside crumb etc. I even tried my hand at some decorative scoring today and they’re almost too pretty to cut. I’ll post a couple pics when I can get to my computer (always using my phone) I also made Focaccia and pizza.
