What a wonderful gift idea! What types of breads does you daughter like? My favorite gluten-free flour in terms of texture is quinoa. The flavor is also great, but you have to like quinoa. I like this flour because out of all the gluten-free flours, it's the easiest to work with and shape.
White rice and brown rice have a pleasant sourdough flavor. Breads made with these flours won't loft as much as breads made with quinoa flour. Rice breads tend to have a a crunchy exterior with a pleasantly chewy interior.
