Hi everyone, I'm brand new to the group and making wild bread, but super excited to get started.. I've read the bios but have a couple of questions, any insight would be awesome & appreciated.
1: what in your opinion is the best gluten free flour to start with
2: What are the absolute must have equipment for getting started because frankly I can't afford everything on the "equipment needed list"

Hi Val, thanks for stopping by! Regarding your question about gluten-free flours, it depends on what type of bread you'd like to make. Quinoa lofts well and has a texture that is closer to breads made with gluten flours, but it does have a distinct flavor and we always had the best results when we milled our own. Both white and brown rice are great options. Sometimes white rice breads can have a "sticky rice" texture on the inside with a crunchy exterior. We think this is delicious, but my not be everyone's cup of tea.

Regarding the equipment, to get started, you'll want a bowl large enough to hold your mother. It doesn't have to be the Glasslock bowl we recommend, just one of a similar size. Same goes for the Marinex baking dish--you need a shallow pan that is large enough for the bowl that houses your mother the fit in with some extra room around the edges to tuck your towel into the water. Then, if you don't already have them, flour-sack cotton towels are the best for covering your mother because they are thin and don't sour as quickly as standard kitchen towels.

These are the top three items you'll want, after that, basic kitchen items like loaf pans, a thermometer, a spatula, a set of measuring cups, and an 8-cup Pyrex measuring cup. If your measuring cups don't include a 1/8 cup, you can measure your flour our by using a 1/4 cup plus 2 T at each feeding. Also, if you do not have an 8-cup Pyrex measuring cup, you can make do with a mixing bowl and regular measuring cups to measure the volume of your mother.
