So today instead of making beginner rolls, I decided I would make them as cinnamon rolls instead. So I followed steps 1-4 of the Beginner Rolls Recipie on page 53 of Wildbread and then I improvised after that. Start by buttering two 9”x13” glass baking long dishes. Then on a floured surface roll out dough to approximately a 9”x17”¯ rectangle.
For the filling you take 1/2 cup softened butter 1 cup brown sugar (I made my own brown sugar by mixing 1 cup of sugar and 1 T. Molasses) 2 T. Cinnamon
In a small bowl combine brown sugar and cinnamon. Spread the softened butter on the dough then sprinkle the brown sugar cinnamon mixture. On the long side of the dough start rolling into a log. Then cut into 24 slices. Place 12 in each glass pan. Let Rolls rise in a warm place for 45 minutes Bake at 350 degrees F. for 25 minutes, or till thermometer reads 200-205 degrees F. Once done flip rolls out onto another pan or dish.
I have a icing recipe too (we normally half the recipe because you don’t use all the icing). It is a cinnabon copy cat recipe my mom copied out of a magazine or book years ago. Here it is: 1 stick softened butter 1 cup powdered sugar 1/3 cup softened cream cheese 1 t. Vanilla
You beat the icing with a mixer until fluffy. Then pipe or spread onto rolls. You can also just do the powdered sugar and water/milk icing. My sister likes that icing better but I prefer the cream cheese icing.
