I'm noticing a few brave bees leaving my hives today, even though it's chilly and rainy.
No one here can resist the happy daffies lining our lane. The only thing blooming right now for my bees are daffodils and lenten roses.
Not even dandelions are blooming yet. Even so, I'm seeing bees arriving back home with their legs covered in bright yellow pollen. I wonder if there's a market for happy daffy honey?
I started a batch of white rice flour English muffins this morning, so soon I'll be smothering one warm from the oven in honey from last year's harvest and butter from my cows.
Meanwhile my newest calf, Linus, wishes he were in our orchard with my far-ranging chickens, but cows are rascals, and love to nibble on tender new fruit trees. The grass is always greener, but fruit trees are sweeter.

Your flowers are beautiful!! We have dandelions all in our yard and my little niece loves blowing them
Also Happy Ressurection/Easter Sunday to everyone!! Hope you all had a wonderful day! My friend Mary and I dressed up in 50s dresses and crinolines!

The fifties were the best for style!!! I remember my mother wearing dresses like yours. And your little niece, precious! Thank you for sharing. It put a big Easter smile on my face. |

Well, I managed to grab a few photos of my white rice English muffins before they were all eaten.
As I patted portions of the dough out onto the table, I noted how wonderful it feels and how easy it is to work with. Unlike gluten flour, once you've cut your 3-inch rounds out, the left-over pieces work right back in for another round.
I ended up with 27 muffins, but I think I'll try them thicker next time and make less.
Wait a minute, those aren't muffins ...
How did my milk cows Lizzy and Miss Maggie make it into my muffin post?
Once they were on the cookie sheets, they started to rise nicely.
Once they'd risen, I tossed them into a skillet for 1 minute on each side.
Wait a minute, who's this muffin?
It's my granddaughter on her way to school with a bouquet for her teacher.
From oven to plate to mouth they went!

I’m using brown rice flour and my counter starter is 3 weeks old. My English muffins are up to temp, internally, but still really doughy. Is that typical of rice flour? |

The interior of rice flour breads can lean towards "gummy" but not in a doughy, under-cooked way. Is your counter mother nice and active, and are you seeing rise in your breads yet? |

These were made from my week 4 wholewheat counter mother, before it was placed in the fridge. They turned out delicious ! |
