Good morning everyone! I live in tropical and sunny South Florida. I've never baked my own bread before but when I found out Whole Foods was selling baked goods with GMO ingredients, I knew I needed to learn to make my own!
My first question... I don't know if it's because I live in a warmer climate, but my starter is always separated when it's time to feed - it has about 1/4 inch of dark liquid on top and is always runny. I'm planning on making muffins this weekend because I don't think it is ready for bread. Any tips and advice would be greatly appreciated!

Hi Emily! The separation is normal, but your mother could have more separation because of your warm climate. If you have an opportunity, try sneaking in an extra feeding for a day and see if there is a noticeable difference in the amount of separation. I hope your muffins turn out well and am excited to hear more about your bread making as your mother develops.
